Black Goji Chia Seed Pudding

Serves two

INGREDIENTS

½ cup chia seeds
2 cups milk of choice
1¼ cups filtered water
½ cup cashews 
15 black gojis
1 tsp vanilla extract
2 dates, pitted and soaked

DIRECTIONS

Mix chia seeds with 2 cups of milk and goji berries, stir to combine. In a separate bowl or jar, soak cashews in about 1 cup of water. Set both aside for at least two hours or overnight. 

Drain cashews and blend with ¼ cup water, vanilla and soaked dates. Blend until creamy and smooth, adding a little more water if needed.

Mix cashew cream in with the chia seeds. Let sit for a few minutes before serving. Garnish with coconut flakes, extra gojis and edible flowers, if desired.
